I was first introduced to artichokes in France, where I saw people steam them and then dip the leaves in melted lemon-butter. The artichoke we eat is actually a flower, not a vegetable, and the temperamental nature of this plant can try the patience of even the most dedicated gardener.
Purple artichokes like the one here are particularly beautiful. They impart a hint of epicurean nobility to a meal. But watch out for the spiny heart of it. Or its beauty could give you indigestion!
